- 4 (8 oz.) New York strip or rib eye steaks (1 1/2-inches thick)
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 to 3 shallots, chopped
- 1 Tbsp. butter or margarine, melted
- 1/3 c. Chablis or other dry white wine
- 1 c. whipping cream
- 1/2 c. Roquefort cheese
- 3 green onions, chopped
- 1/2 c. walnuts, toasted
Directions

1Sprinkle steaks with salt and pepper.

2Cook steaks in a medium skillet over medium heat for 8 minutes on each side or to a desired degree of doneness.

3Remove steaks to a serving platter, discarding drippings in skillet.

4Set steaks aside and keep warm.
