  • 4 (8 oz.) New York strip or rib eye steaks (1 1/2-inches thick)
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 to 3 shallots, chopped
  • 1 Tbsp. butter or margarine, melted
  • 1/3 c. Chablis or other dry white wine
  • 1 c. whipping cream
  • 1/2 c. Roquefort cheese
  • 3 green onions, chopped
  • 1/2 c. walnuts, toasted

Directions

    Sprinkle steaks with salt and pepper.

    Cook steaks in a medium skillet over medium heat for 8 minutes on each side or to a desired degree of doneness.

    Remove steaks to a serving platter, discarding drippings in skillet.

    Set steaks aside and keep warm.
