- 1 small sweet red pepper
- 1 small green pepper
- 1 carrot
- 1 -2 tablespoon olive oil
- 1 lb raw shrimp, peeled and de-veined
- 1 tablespoon cornstarch
- 2 teaspoons brown sugar
- 12-34 teaspoon ground ginger
- 1 cup orange juice
- 14 cup soy sauce
Directions

1Cut peppers and carrot into julienne strips.

2Heat oil in stir fry pan or skillet.

3Add vegetables and cook for 3 minutes.

4Add shrimp and cook for 3-5 minutes until shrimp turn pink.

5Combine the cornstarch, brown sugar, ginger, orange juice and soy sauce until smooth.

6Add to stir fry.

7Bring to a boil and cook for another 2 minutes or until thickened.

8Serve over hot cooked rice.

9May add broccoli and cauliflower if desired.
