Strawberry Upside-Down Cake

- 3/4 c. butter or margarine
- sugar
- 1 pt. strawberries, washed and hulled
- 1 tsp. grated lemon rind
- 1 tsp. cornstarch
- 1 egg
- 1 1/2 sifted flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
Directions

1Melt 1/4 cup butter in 9-inch square pan.

2Mix 1/2 cup butter; add 1/2 cup sugar and beat until light.

3Add egg and beat well. Sift flour, baking powder and salt and add to first mixture with milk, beating until smooth.

4Carefully spread on berries.

5Bake in oven (375°) about 30 minutes.

6Let stand 10 minutes; turn out on serving dish.

7Serve at once with cream if desired.
