Stuffed Acorn Squash

- 1 small acorn squash
- 6 oz. lean pork
- 1/4 c. chopped celery
- 1/4 c. chopped onion
- 1/4 tsp. salt
- 1/4 tsp. curry powder
- dash of cinnamon
- 1/2 c. unsweetened applesauce
- 1 slice cubed whole wheat bread
Directions

1Cut squash in half, remove seeds and bake cut-side down at 350° for 50 minutes.

2In skillet, cook pork, celery and onion until meat is no longer pink and vegetables are tender.

3Drain fat.

4Stir in salt, curry powder and cinnamon.

5Cook 1 minute more.

6Stir in applesauce and bread cubes.

7Place stuffing in squash halves; bake uncovered 20 minutes more.

8Makes 2 servings.
