  • 2 avocados
  • 1 tomato seeded, finely chopped
  • 1 chili pepper jalapeno, seeded, finely chopped
  • 1/3 cup peas
  • 1/3 cup panela cheese finely chopped
  • 2 tablespoons mayonnaise
  • lemon juice as desired
  • lettuce leaves for garnish
  • pepper as desired
  • salt as desired

Directions

    Mix the tomato, jalapeno pepper, peas, panela cheese, mayonnaise, pepper, and salt in a medium bowl.

    Cut the avocados in half, remove the bone and some of the pulp.

    Pour lemon juice all over the avocados.

    Remove the avocados carefully and skin using a spoon.

    Garnish 2 plates with lettuce leaves and place the peeled avocados on them.

    Stuff the avocados with the vegetables and cheese, and serve.
