- 1 Goat cheese (soft)
- 1 Bell pepper
- 1 Salami (in cubes)
- 1 Tomato
Directions

1Mix the goat cheese, salami and tomato (cubes, fresh, not canned) in a bowl, add salt/pepper to taste

2Chop the top off your bell pepper and remove core/seeds.

3Stuff the goat and salami mix into the pepper.

4Stick in the oven or microwave for a few minutes; the major advantage is that every ingredient is already totally OK to eat, so they're super quick!

5(At my first try I stuck them in for ten minutes at approx 300F...that's way too much)!

6Try adding fresh parsley, mint or basil to this recipe, or mix your stuffing up with some lime juice and top it off with fresh goat cheese just before serving.
