Ingredients
- 8 large green or red peppers
- 1 c. cooked rice
- 1 1/2 lb. mixed ground pork, veal and beef
- 1 small onion, chopped
- 1 tsp. grated Parmesan cheese
- 1/2 can tomato or V-8 juice
- salt and pepper to taste
Directions

1Saute onion and meat until brown.

2Cut tops and remove seeds from peppers; par-boil until slightly soft, about 2 minutes. Remove from water and set aside to cool.

3Cook and drain rice.

4Mix meat, rice and cheese together.

5Season to taste.

6Stuff peppers and place in large pot.

7Pour on tomato juice and cook at low temperature for approximately 1 1/2 hours.

8Can also be baked in large Pyrex dish at 350° for 35 to 45 minutes.

9(Cover with foil until almost done and remove for last few minutes.)
