Stuffed Peppers

Ingredients

  • 8 large green or red peppers
  • 1 c. cooked rice
  • 1 1/2 lb. mixed ground pork, veal and beef
  • 1 small onion, chopped
  • 1 tsp. grated Parmesan cheese
  • 1/2 can tomato or V-8 juice
  • salt and pepper to taste

Directions

    Saute onion and meat until brown.

    Cut tops and remove seeds from peppers; par-boil until slightly soft, about 2 minutes. Remove from water and set aside to cool.

    Cook and drain rice.

    Mix meat, rice and cheese together.

    Season to taste.

    Stuff peppers and place in large pot.

    Pour on tomato juice and cook at low temperature for approximately 1 1/2 hours.

    Can also be baked in large Pyrex dish at 350° for 35 to 45 minutes.

    (Cover with foil until almost done and remove for last few minutes.)
