- 1 lb. hot sausage
- 1/2 c. seasoned stuffing mix
- 1 medium onion, finely chopped
- 1 c. shredded cheese (Cheddar, Swiss or Mozzarella)
- 1 (8 oz.) can tomato sauce
- 8 medium to large yellow squash
Directions

1Gently boil squash (whole) until tender.

2Let cool slightly, then slice lengthwise and scoop out pulp into bowl.

3Cook sausage and chopped onion; drain off excess oils.

4Add to pulp of squash, then add stuffing mix.
