Stuffed Squash

Ingredients

  • 1 lb. hot sausage
  • 1/2 c. seasoned stuffing mix
  • 1 medium onion, finely chopped
  • 1 c. shredded cheese (Cheddar, Swiss or Mozzarella)
  • 1 (8 oz.) can tomato sauce
  • 8 medium to large yellow squash

Directions

    Gently boil squash (whole) until tender.

    Let cool slightly, then slice lengthwise and scoop out pulp into bowl.

    Cook sausage and chopped onion; drain off excess oils.

    Add to pulp of squash, then add stuffing mix.
