  • 2 tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 6 None beefsteak tomatoes, tops cut off and diced, bottoms cored and seeds removed
  • 1/2 cup cooked corn kernels
  • 1/2 cup diced red pepper
  • 2 None scallions, chopped
  • 1/2 cup chopped marinated artichoke hearts
  • 1 None avocado, diced
  • 1/2 cup diced fresh mozzarella cheese
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh basil, plus 6 sprigs for garnish

Directions

    Whisk together vinegar, oil and garlic. Add diced tomato, corn, red pepper, scallions, avocado, artichokes, mozzarella cheese and herbs. Season then distribute between tomatoes. Transfer to a serving platter and garnish with basil sprigs.
