- 2 tbsp red wine vinegar
- 3 tbsp extra virgin olive oil
- 1 clove garlic, minced
- 6 None beefsteak tomatoes, tops cut off and diced, bottoms cored and seeds removed
- 1/2 cup cooked corn kernels
- 1/2 cup diced red pepper
- 2 None scallions, chopped
- 1/2 cup chopped marinated artichoke hearts
- 1 None avocado, diced
- 1/2 cup diced fresh mozzarella cheese
- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh basil, plus 6 sprigs for garnish
Directions

1Whisk together vinegar, oil and garlic. Add diced tomato, corn, red pepper, scallions, avocado, artichokes, mozzarella cheese and herbs. Season then distribute between tomatoes. Transfer to a serving platter and garnish with basil sprigs.
