  • 1 (9 inch) frozen deep dish pie shells
  • 8 ounces bacon, cut into 1/2-inch pieces
  • 1 onion, halved and thinly sliced
  • salt
  • pepper
  • 6 large eggs
  • 1 cup half-and-half
  • 1 cup swiss cheese, shredded

    Preheat oven to 400 degrees F; using a fork, prick the inside of the pie shell, then bake for 8 minutes.

    Remove from oven; lower the temperature to 325 degrees F.

    Meanwhile, in large skillet, cook the bacon over medium heat, stirring often, until crisp, about 5 minutes; using a slotted spoon, transfer to paper towels to drain.

    Add the onion and 1/2 t each salt and pepper to the bacon fat in the skillet and cook over medium heat, stirring occasionally, until softened, about 5 minutes.

    Increase the heat to medium-high and cook, stirring, until the onion is golden, about 2 minutes.

    Transfer the onion to the pie shell.

    In large bowl, beat the eggs with the half-and-half, stir in the cheese and the cooked bacon.

    Pour the mixture into the pie shell.

    Bake until set, about 40 minutes.
