  • 1 package Wild Arugula, 10-12 Ounce Package
  • 1 stalk Fennel Sliced (only Bulb)
  • 10 leaves Mint, Chopped
  • 1 whole Large Chopped Yellow Or Vine Tomato
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 whole Lemon, Juiced
  • 1/2 Tablespoons White Balsamic Vinegar
  • Salt And Pepper, to taste
  • 1/4 cups Shaved Parmesan (or Your Favorite Hard Cheese)

Directions

    In a large bowl combine the arugula, sliced fennel, mint, and tomato.

    In a separate bowl mix the olive oil, lemon juice, balsamic vinegar, and salt. Pour over the salad, top with cheese and enjoy!
