  • 2 lb. squash (season), sliced, steamed, drained
  • 1 grated carrot
  • 2 Tbsp. pimento
  • 1 chopped onion
  • 1 can cream of chicken soup
  • 1/2 pt. sour cream
  • 1 stick butter, melted
  • 1 pkg. Pepperidge Farm stuffing mix

Directions

    Slice, steam and drain squash.

    Add carrot, pimento, onion and chicken soup.

    Mix (stuffing mix) sour cream, butter and stuffing mix.

    Add 1/2 this mix to casserole.

    Sprinkle other half over top of casserole.

    Bake at 375° for 30 to 35 minutes.
