Summer Pudding

- 750 g mixed berries
- 100 g caster sugar
- 5 tablespoons water
- 11 slices day-old white bread
Directions

1Grease a 1 litre pudding basin or line with clingfilm to help turn out.

2Dissolve sugar in water over a low heat.

3Add berries into sugar water and simmer for 7-10 minutes (If you have strawberries or other soft fruits add them 3-4 mins from the end) Trim bread of crusts the cut into fingers.

4Line pudding basin with bread that has been dunked in the berry juices.

5Fill half way with fruit then bread and then the rest of fruit and bread again.

6Put a saucer ontop with a weight and leave in the fridge for 12 hours or overnight.

7This pudding also freezes well.

8Serve with pouring cream and any leftover fruit in their juices.
