- 2 lb. summer squash, cut up (about 6 c.)
- 1 c. chopped onion
- 1 (8 oz.) pkg. herb seasoned stuffing mix
- 1 stick melted margarine
- 1 (8 oz.) carton sour cream
- 1 can cream of chicken soup
- 2 grated carrots
Directions

1Cook squash and onion about 5 minutes and drain.

2Combine stuffing mix with melted butter.

3Combine sour cream with cream of chicken soup and carrots.

4Fold into squash.

5Place 1/2 the stuffing mixture into casserole.

6Spread squash mixture on top and cover with remaining stuffing.

7Bake at 350° for 30 minutes.
