Ingredients

  • 1 lb. crystallized pineapple
  • 1 lb. crystallized cherries (red and green)
  • 1 3/4 c. plain flour (all-purpose)
  • 4 c. pecans (whole or chopped)
  • 2 sticks butter (may use 1 stick margarine)
  • 1 c. sugar
  • 5 eggs
  • 2 Tbsp. black walnut flavoring

Directions

    Mix flour with fruit and nuts.

    Cream butter and sugar real good.

    Add eggs (one at a time) and beat well after each one.

    Add fruit mixture to batter and fold all together; add flavoring. Grease a 10-inch tube pan and line with brown paper (grease paper).

    Add cake batter.

    Bake 1 hour and 20 minutes at 275°. Check to be sure it is done after this time.

    It may need to bake a while longer.

    This is a delicious cake.
