Ingredients

  • 2 cups fresh green peas
  • 1 tbs oil
  • 1 thick slice of bacon thinly sliced
  • 1 small onion thinly chopped
  • 2 tbs butter
  • 1/2 pound okra sliced 1/2-inch thick
  • 1/4 cup basil
  • 3 medium tomatoes peeled, seeded, coarsley chopped
  • 3 ears of corn, kernals cut off

    1. In a large pot of boiling salted water cook peas till tender, 5 min. Drain, reserving 3/4 cup of cooking liquid

    2. In a deep skillet heat the oil. Add the bacon and cook over moderately high heat till browned. Add onion, cook till softened. Add okra and cook 8 min. Add tomatoes and corn cook till tomatoes break down. Add peas with cooking liquid. Season with salt and pepper. Simmer for 2 min, stir in butter and basil ans serve
