Sweet Gherkin Deviled Eggs

  • 12 Hard Boiled Eggs, Peeled
  • 3/4 cups Mayonnaise
  • 1/4 cups Dijon Mustard
  • 1/4 cups Chopped Gherkin Pickles
  • 1/2 teaspoons Freshly Ground Black Pepper
  • Paprika
  • Additional Sweet Gherkin Pickles, Sliced For Decoration

Directions

    Slice each hard-boiled egg in half lengthwise and place the yolk in a food processor.

    Set the whites aside.

    Add the mayonnaise, mustard, chopped gherkins and pepper to the food processor.

    Puree for several minutes, or until smooth.

    Place the mixture into a large Ziploc bag, snip off the tip, and fill each halved egg.

    Sprinkle with paprika, and top with a gherkin pickle slice for decoration.

    Note: Make sure to thoroughly dry off the gherkin pickles with paper towels before chopping or slicing.
