- 2 gal. cut up cucumbers
- 2 c. salt
- 1 gal. water
- 6 c. sugar
- 1 pt. vinegar
- 2 Tbsp. allspice
- 4 or 5 Tbsp. alum
Directions

1Add two cups salt to 1 gallon of water.

2Bring to a boil.

3Pour over cucumbers.

4Let stand for 7 days.

5Rinse well.

6Pour clear boiling water over cucumbers.

7Let stand for 1 day; drain.

8Pour boiling alum water over cucumbers.

9Use four or five tablespoons alum.

10Let stand for one day.

11The next day, soak in clear boiling water.

12Make syrup (sugar, vinegar, allspice), boil and pour over cucumbers.

13Let stand one day.

14The next day, boil again.
-
15Put in jars.
-
16Boil juice down just enough to cover pickles.
