Ingredients

  • 1 cup bulgur, uncooked
  • 12 cup olive oil
  • 13 cup lemon juice
  • 1 cup green onion, chopped finely
  • 1 cup celery, chopped finely
  • 2 cups fresh parsley
  • 14 cup of fresh mint, chopped
  • 3 tomatoes, diced
  • 1 large cucumber, peeled, seeded, chopped
  • 1 12 teaspoons salt
  • pepper

Directions

    Place bulgur in bottom of a large bowl.

    Mix oil and lemon juice, pour over bulgur.

    Layer vegetable on top of bulgur in the order they are listed.

    Sprinkle salt and pepper over cucumber.

    Let sit 24 hours.

    Before serving, toss salad to mix.
