Texas Spring Salad

Ingredients

  • 1 large head lettuce
  • 1/2 pkg. fresh spinach
  • 3 finely chopped stalks celery
  • 1 finely chopped bell pepper
  • scallions or 1 sweet onion, chopped
  • 1 pkg. frozen peas (do not thaw or cook)
  • 1 Tbsp. sugar
  • 1 pt. mayonnaise
  • Swiss cheese, cut in strips
  • 6 slices cooked bacon
  • Parmesan cheese

Directions

    Layer half of salad ingredients.

    Sprinkle half sugar and cheeses over top.

    Using a teaspoon, cover with dabs of mayonnaise (use half of 1 cup).

    Layer again.

    Sprinkle remaining sugar and cheeses; again, cover with rest of mayonnaise.

    Cover tightly. Refrigerate 6 to 8 hours.

    Don't toss until ready to serve, then add crumbled bacon.
