- 1 lb. hamburger
- 1 (8 oz.) can tomato sauce
- 1 1/4 oz. envelope taco seasoning
- 2 eggs
- 1 c. milk
- 1 (16 oz.) can red kidney beans
- 1 1/2 c. shredded Monterey Jack cheese
- 1/2 c. chopped onion
- 1/3 c. water
- 10 taco shells, coarsely crushed
- 1 c. shredded lettuce
- 1 small tomato, chopped
- 1/4 c. sliced ripe olives
- 1/2 c. shredded Monterey Jack cheese
Directions

1In large skillet cook hamburger and onion until tender; drain. Stir in tomato sauce, water and taco seasoning.

2Heat through. Remove from heat.

3Beat eggs, stir in milk.

4Add small amount of tomato sauce mixture to egg mixture.

5Stir constantly.

6Stir in kidney beans, then 1 1/2 cups Monterey Jack cheese and crushed taco shells.

7Turn into a 12 x 7 x 2-inch pan.

8Bake at 350° for 30 minutes.

9Top with lettuce, remaining cheese, tomato and olives.

10Let stand 5 to 10 minutes before cutting into squares.
