  • 1 lb. hamburger
  • 1 (8 oz.) can tomato sauce
  • 1 1/4 oz. envelope taco seasoning
  • 2 eggs
  • 1 c. milk
  • 1 (16 oz.) can red kidney beans
  • 1 1/2 c. shredded Monterey Jack cheese
  • 1/2 c. chopped onion
  • 1/3 c. water
  • 10 taco shells, coarsely crushed
  • 1 c. shredded lettuce
  • 1 small tomato, chopped
  • 1/4 c. sliced ripe olives
  • 1/2 c. shredded Monterey Jack cheese

Directions

    In large skillet cook hamburger and onion until tender; drain. Stir in tomato sauce, water and taco seasoning.

    Heat through. Remove from heat.

    Beat eggs, stir in milk.

    Add small amount of tomato sauce mixture to egg mixture.

    Stir constantly.

    Stir in kidney beans, then 1 1/2 cups Monterey Jack cheese and crushed taco shells.

    Turn into a 12 x 7 x 2-inch pan.

    Bake at 350° for 30 minutes.

    Top with lettuce, remaining cheese, tomato and olives.

    Let stand 5 to 10 minutes before cutting into squares.
