Ingredients

  • 1 1/2 lb. lean ground beef
  • 1 onion, chopped
  • 1 pkg. taco seasoning
  • 1 (16 oz.) can whole kernel corn (undrained)
  • 1 (16 oz.) can pinto beans (undrained)
  • 1 (16 oz.) can stewed tomatoes (undrained)
  • 1 c. water
  • 1 (14 oz.) can beef broth
  • chopped chives for garnish
  • sour cream for garnish

Directions

    In a large roaster, combine beef and chopped onion.

    Brown, stirring well.

    Add taco seasoning, corn, beans, tomatoes, water and broth; stir well.

    Bring to boiling point, then turn heat down and simmer for 2 hours.

    Or it could be cooked in a crock-pot all day.
