  • 2 eggs, separated
  • 2 cups milk
  • 1/3 cup sugar
  • 2 tablespoons quick-cooking tapioca
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

    Comgine egg yoks, milk, 1/4 sugar, tapioca, and salt in saucepan.

    Cook over medium heat, stirring constantly until mixture comes to a full boil. Remove from heat.

    Blend in vanilla extract.

    Beat egg whites until soft peaks form. Gradually add remaining sugar and beat until sugar disappears.

    Fold tapioca mixture in egg whites gently but thoroughly.
