- 2 eggs, separated
- 2 cups milk
- 1/3 cup sugar
- 2 tablespoons quick-cooking tapioca
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Directions

1Comgine egg yoks, milk, 1/4 sugar, tapioca, and salt in saucepan.

2Cook over medium heat, stirring constantly until mixture comes to a full boil. Remove from heat.

3Blend in vanilla extract.

4Beat egg whites until soft peaks form. Gradually add remaining sugar and beat until sugar disappears.

5Fold tapioca mixture in egg whites gently but thoroughly.

6Cool and spoon into serving dishes.
