- 2 c. skim milk
- 2 Tbsp. quick cooking tapioca
- artificial sweetener to equal 5 Tbsp. sugar
- 1/4 tsp. salt
- 2 slightly beaten eggs
- 1/2 tsp. vanilla
Directions

1Combine milk, tapioca and sweetener and salt.

2Let stand 5 minutes.

3Add 2 slightly beaten egg yolks.

4Bring to a boil over medium heat, stirring constantly.

5Remove from heat (mixture will be thin).

6Add vanilla. Beat 2 egg whites to stiff peaks. Gradually fold in hot mixture. Chill.

7Serves 8.
