- 1 lb. margarine, softened
- 1 lb. brown sugar
- 4 c. plain flour
- 1 lb. chopped pecans
- 6 eggs, separated
- 1 lb. cherries (candied)
- 1 lb. pineapple (candied)
- 1 tsp. baking powder
- 1/2 tsp. lemon extract
Directions

1Cream butter and sugar; add well beaten egg yolks.

2Sift together 3 cups of flour and baking powder and add to mixture. Beat egg whites until stiff and add.

3Mix fruit and pecans with 1 cup of flour.

4Mix this into the batter with a fork; pour into a tube pan and let stand in oven covered with foil.

5Place pan of water on shelf under cake.

6Bake at 250° for 3 hours, then 1 hour more at 300°.

7Let stand 20 minutes before turning out on plate.
