  • 2 lb. tenderloin tips
  • salt, pepper and flour to coat meat
  • 2 Tbsp. olive oil
  • 1 c. beef stock
  • 1 bay leaf
  • 1 clove garlic, chopped
  • 1 pinch of rosemary
  • 1 bell pepper
  • 1/2 c. butter
  • 6 small onions
  • 2 tomatoes
  • 2 potatoes
  • 1 tsp. parsley
  • 2 c. red wine

    Cut meat into 1 1/2 inch cubes; season with flour.

    Heat olive oil in deep iron skillet or Dutch oven.
