  • 2 whole Radishes
  • 1 whole Peach
  • 1 whole Cucumber
  • 10 leaves Small Arugula
  • 10 leaves Vietnamese Coriander
  • 1 teaspoon Fish Sauce
  • 1 teaspoon Brown Sugar
  • 1 teaspoon Lime Juice

    Use a mandoline with the medium teeth and shred the 3 first ingredients. Mince and add herbs.

    In a mortar, mix (with a vengeance) the other ingredients.

    Mix both.

    Easy enough??

    I ate this with 2 eggs, some Fava beans and red beets.

    Eggs: I cook them at the lowest temperature possible on the induction cooktop in half and half mixture of butter and dark honey (try it please).
