- 1 whole Peach
- 1 whole Cucumber
- 10 leaves Small Arugula
- 10 leaves Vietnamese Coriander
- 1 teaspoon Fish Sauce
- 1 teaspoon Brown Sugar
- 1 teaspoon Lime Juice
Directions

1Use a mandoline with the medium teeth and shred the 3 first ingredients. Mince and add herbs.

2In a mortar, mix (with a vengeance) the other ingredients.

5I ate this with 2 eggs, some Fava beans and red beets.

6Eggs: I cook them at the lowest temperature possible on the induction cooktop in half and half mixture of butter and dark honey (try it please).
