Ingredients

  • 2 1/4 pounds mackeral Spanish, or any white fleshed fish
  • 2 large potatoes boiled
  • 6 kaffir lime leaves snipped into thin strips with scissors
  • 3 tablespoons cream powder coconut, or coconut milk
  • 2 tablespoons fish sauce
  • 1/2 teaspoon shrimp paste
  • 1 tablespoon chili powder or more
  • 1/2 teaspoon ground cumin
  • 1 tablespoon ground coriander
  • 1/2 teaspoon brown sugar
  • 3 green onions chopped
  • 1 galangal thumb-size piece, OR ginger, pounded
  • 3 cloves garlic chopped
  • 1 red chili chopped
  • 1 handful coriander leaves chopped
  • 2 tablespoons corn flour
  • oil for high temp. frying
  • 1 handful fresh coriander

Directions

    Mashed the boiled potato.

    Microwave the fish flesh until soft.

    In a bowl, mix in all the ingredients.

    Make into round patties and deep fry in semi hot oil until golden brown.

    Fry three patties at a time.

    Dish out in a kitchen paper towel to drain excess oil.

    Serve with chilli sauce,lime wedges and fresh coriander.
