  • 1 cup spelt flour
  • 1/2 cup dark brown sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking soda
  • 1 teaspoon vanilla bean extract
  • 1 tablespoon apple cider vinegar
  • 1/2 cup water
  • 3 tablespoons coconut oil
  • 1/2 cup dairy free chocolate chips (this is the modified version)

Directions

    Preheat the oven at 350 degrees. Pour the first 8 ingredients in a medium size bowl in the order as they appear. Mix well. Next, add in the chocolate chips. Mix again, if batter is too thick, pour in more water one tablespoon at a time. Use a nonstick mini muffin pan. Scoop a tablespoon of batter into the pan. Make sure you don't overflow the batter. Bake for 10 to 12 minutes. DELICIOUS!
