  • 1 head Boston lettuce (about 1/2 lb.)
  • 1 head red leaf lettuce (about 1/4 lb.)
  • 2 tsp. Dijon mustard
  • 3 Tbsp. red wine vinegar
  • 1/4 c. olive oil
  • 1/4 c. fresh parsley
  • salt and freshly ground pepper to taste
