  • 2 c. chopped pecans
  • 1 1/4 c. butter
  • 3 c. sifted flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 c. sugar
  • 4 eggs
  • 1 c. milk
  • 1 tsp. vanilla

    Toast pecans in 1/4 cup butter at 350° for 20 to 25 minutes. Sift flour with baking powder and salt.

    Cream butter and sugar. Add eggs, one at a time, blending well.

    Add dry ingredients, alternating with milk.

    Stir in vanilla and 1 1/3 cups pecans. Bake in 3 (8 or 9-inch) pans at 350° for 25 to 30 minutes.
