Tofu Enchiladas

Ingredients
- 12 corn or flour tortillas
- enchilada sauce
- 1 lb. tofu, rinsed and drained
- 2 Tbsp. peanut butter
- 2 Tbsp. tomato paste
- 1/4 c. soy sauce
- 1 small can chopped olives
- 1/2 small can chopped mild Ortega chilies
- 1 bunch chopped green onions
Directions

1Mix tofu and remaining ingredients.

2Spray a 9 x 12-inch pan with Pam.

3Cover bottom of pan with sauce.

4Prepare tortillas by toasting lightly in toaster oven until soft.

5Spread each tortilla with a little sauce and a portion of the tofu mixture.

6Roll and place in pan.

7Cover rolled and stuffed tortillas with more sauce and bake for 25 to 30 minutes at 350°.

8Better when reheated.
