Tofu Enchiladas

Ingredients

  • 12 corn or flour tortillas
  • enchilada sauce
  • 1 lb. tofu, rinsed and drained
  • 2 Tbsp. peanut butter
  • 2 Tbsp. tomato paste
  • 1/4 c. soy sauce
  • 1 small can chopped olives
  • 1/2 small can chopped mild Ortega chilies
  • 1 bunch chopped green onions

Directions

    Mix tofu and remaining ingredients.

    Spray a 9 x 12-inch pan with Pam.

    Cover bottom of pan with sauce.

    Prepare tortillas by toasting lightly in toaster oven until soft.

    Spread each tortilla with a little sauce and a portion of the tofu mixture.

    Roll and place in pan.

    Cover rolled and stuffed tortillas with more sauce and bake for 25 to 30 minutes at 350°.

    Better when reheated.
