Tomato Basil Soup

Ingredients
- 4 cups whole tomatoes or 4 cups crushed tomatoes
- 4 cups tomato juice
- 12 -14 fresh basil leaves (washed)
- 12-1 pint heavy whipping cream
- 12 cup butter
- salt & pepper
Directions

1Puree whole tomatoes or crushed tomatoes in blender or food processor.

2I prefer to have a few timy pieces of tomatoes so that it isn't totally smooth.

3Melt butter In a large pan.

4Add tomatoes to pan leaving about 1 cup still in blender or food processor.

5Place basil in blender or processor and blend to chop up basil.

6Pour remaining tomatoes and basil into pot and add tomatoe juice.

7Stir in cream and heat.

8Do not boil.

9Salt and peper to taste.

10Can add non fat whipping cream in place of heavy cream and adjust amount of basil to taste.
