- 6 ripe tomatoes
- salt
- 1 medium green pepper, diced
- 1 small onion, chopped
- 14 cup butter, melted
- 1 cup regular cooked rice
- 1 egg, well beaten
- 14 teaspoon oregano
- 14 teaspoon ground basil
- 12 teaspoon salt
- 1 cup shredded cheddar cheese, shredded
- 4 slices bacon, cooked and crumbled
Directions

1Wash and cut tops off tomatoes; scoop out pulp.

2Sprinkle inside of tomato shells lightly with salt; invert to drain.

3Chop pulp.

4Saute green pepper and onion in butter.

5Add tomato pulp rice egg and seasoning, mix well.

6Stir in cheese and bacon, saving small amount of each to sprinkle on top.

7Fill tomatoes with rice mixture.

8Sprinkle with reserved cheese and bacon.

9Place tomatoes in greased shallow baking dish.

10Add small amount of water.

11Bake at 350 degrees for 25-30 minutes.
