  • 1 (9-inch) pie crust, bake and cool
  • 6 to 8 Italian plum tomatoes, peel and slice
  • 1 c. mayonnaise
  • 1 c. shredded Cheddar cheese
  • 2 Tbsp. chives, chopped
  • 1 tsp. basil

Directions

    Place tomatoes on bottom of pie shell.

    Mix mayonnaise, cheese, chives and basil.

    Place on top of tomatoes.

    Sprinkle top of pie with Parmesan cheese.

    Bake at 375° for 20 to 25 minutes or until bubbly and brown.

    Pie serves 6.
