Ingredients

  • 1/2 c. onions, chopped
  • 1 clove minced garlic
  • 2 Tbsp. olive oil
  • 1 small carrot, grated
  • 2 Tbsp. green pepper or celery
  • 1 bay leaf
  • 1 tsp. oregano
  • 1/2 tsp. thyme
  • 1/4 tsp. basil
  • 2 Tbsp. fresh chopped parsley
  • 2 c. tomatoes
  • 1 tsp. salt
  • 1 (6 oz.) can tomato paste
  • 1/4 c. brown sugar
  • 1/8 tsp. pepper
  • 1 c. chopped mushrooms

Directions

    Wash, quarter and cook tomatoes.

    Cook until soft.

    Put through food mill or colander.

    Add all other ingredients and cook until thick (can use pressure cooker following directions for cooking low acid vegetables).

    Makes 7 quarts.
