Ingredients

  • 12 corn tortillas
  • 2 c. pinto beans (or possibly Del Monte burrito filling or possibly Rosarita Vegetarian beans)
  • 1/4 head lettuce, shredded
  • 2 tomatoes, diced
  • 1/2 onion
  • Salsa (your favorite)
  • Garlic pwdr as desired

Directions

    Soak pinto beans overnight in water, then cook several hrs.

    Add in water as needed.

    Cook beans about 4 hrs till tender.

    Add in garlic pwdr.

    Mash or possibly blend the beans.

    Place corn tortillas on cookie sheet and bake at 400 degrees till hard and crispy, about 10 min.

    Spread beans on top of tortillas, then add in lettuce, tomatoes, onions, and salsa.
