- 1 1/3 c. all-purpose flour
- 1/2 c. yellow cornmeal
- 1 Tbsp. baking powder
- 2 tsp. sugar
- 1 tsp. salt
- 2 eggs, beaten
- 1/3 c. milk
- 2 Tbsp. oil
- 1 (8 1/2 oz.) can cream-style corn
- 1 (12 oz.) can whole kernel corn, drained
- oil for deep frying
Directions

1Lightly spoon flour into measuring cup, level off.

2In medium bowl, combine flour, cornmeal, baking powder, sugar and salt.

3In large bowl, combine eggs, milk, oil and cream-style corn.

4Blend in dry ingredients stirring just until moistened.

5Stir in whole kernel corn.

6In deep fat fryer or heavy saucepan, drop batter by tablespoonfuls and fry in 2 to 3 inches of hot fat (365°) for 2 to 3 minutes on each side or until golden brown. Drain on paper towel.

7Serve warm.

8Makes 28 fritters.
