Ingredients

  • 2 (7 oz.) cans white or albacore tuna in water
  • 4 oz. low-fat cream cheese (Neufchatel), cut into 6 pieces
  • 2 Tbsp. mayonnaise (can use low-fat)
  • 2 Tbsp. fresh lemon juice
  • 1/4 c. sliced scallions
  • 1/2 tsp. cayenne pepper
  • 1/2 c. chopped parsley
  • 1 Tbsp. soy sauce (can use low sodium)
  • 1 Tbsp. sherry

Directions

    Mix tuna in blender or food processor until broken.

    Add remaining ingredients and mix until fairly smooth; don't puree. Refrigerate until slightly thickened, about 1 hour.

    Serve with whole grain crackers and fresh vegetables.
