Turkey Enchiladas

  • 2 pkg. corn tortillas
  • 3 c. shredded turkey
  • 1 large container sour cream
  • 2 (12 oz.) pkg. grated Jack cheese
  • 1/4 c. chopped green chilies (canned)
  • 1 small bell pepper, chopped
  • 2 Tbsp. oil
  • 1 can cream or mushroom or cream of chicken soup
  • 1 c. milk
  • 1 large clove garlic, minced
  • 2 tsp. salt
  • 1 tsp. oregano
  • 1 medium onion, chopped

Directions

    In a fry pan, saute chilies, pepper, onion, garlic and oregano in the oil.

    Remove from heat.

    Stir together turkey, salt, cheese, sour cream and pepper mixture.

    Soak tortillas one at a time in water until soft.

    Put turkey mixture in each and roll up. Put in two 9 x 13-inch pans, seam side down.

    Stir milk and soup together; pour over enchiladas.

    Bake at 300° approximately 30 minutes.

    (Cheddar may be used instead of Jack cheese.)

    A tomato may be chopped and added to pepper mixture or jalapeno to taste.
