Turkey Enchiladas

Ingredients
- 2 pkg. corn tortillas
- 3 c. shredded turkey
- 1 large container sour cream
- 2 (12 oz.) pkg. grated Jack cheese
- 1/4 c. chopped green chilies (canned)
- 1 small bell pepper, chopped
- 2 Tbsp. oil
- 1 can cream or mushroom or cream of chicken soup
- 1 c. milk
- 1 large clove garlic, minced
- 2 tsp. salt
- 1 tsp. oregano
- 1 medium onion, chopped
Directions

1In a fry pan, saute chilies, pepper, onion, garlic and oregano in the oil.

2Remove from heat.

3Stir together turkey, salt, cheese, sour cream and pepper mixture.

4Soak tortillas one at a time in water until soft.

5Put turkey mixture in each and roll up. Put in two 9 x 13-inch pans, seam side down.

6Stir milk and soup together; pour over enchiladas.

7Bake at 300° approximately 30 minutes.

8(Cheddar may be used instead of Jack cheese.)

9A tomato may be chopped and added to pepper mixture or jalapeno to taste.
