Ingredients

  • 1 12 tablespoons oil
  • 1 cup vidal onion, diced
  • 1 cup carrot, diced
  • 1 cup celery, diced
  • 2 tablespoons italian seasoning (or substitute for savory or poultry seasoning)
  • 1 teaspoon sage, dried
  • 34 cup wild rain rice
  • 1 lb turkey, cooked, diced
  • 8 cups low sodium chicken broth
  • 12 cup frozen peas
  • 12 cup diced plum tomato (optional)
  • 2 tablespoons lemon juice

Directions

    Heat olive oil in large pot to medium-high heat.

    Add the onions, carrots and celery to pot and cook until tender.

    Add the Italian seasoning, sage, rice blend and turkey.

    Stir and cook for a minute.

    Add chicken broth and bring to a boil then turn down and simmer for 20 minutes to low heat.

    Add peas, tomatoes and lemon juice and cook for another 10 to 20 minutes.
