- 1 eggplant, cut in shoestring strips
- boiling water
- 1 lb. turkey breast steak, cut in strips
- 1 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 1 Tbsp. sherry wine
- 4 Tbsp. oil
- 5 hot peppers, shredded fine
- 1 small clove garlic, chopped fine
- 1 Tbsp. fresh ginger, chopped
- 1/2 c. chicken stock
Directions

1Cover eggplant with boiling

2water; let stand 5 minutes and drain well.

4turkey meat in mixture of cornstarch, soy sauce and sherry.

5Heat pan; add oil and saute hot peppers until they turn color.
