  • 1 (16oz) plain yogurt
  • 1 cucumber peeled, seeded,& grated
  • 3-4 cloves garlic (chopped)
  • 1 tbs. parsley (chopped)
  • 1 tbs. mint (chopped)
  • 1 tbs. lemon juice
  • salt & pepper

Directions

    1.)line strainer with cheesecloth (viva paper towel)and place over bowl. Set yogurt in cheesecloth and cover colander w/ plastic wrap. Allow yogurt to drain overnight

    2.) Lay grated cucumber on paper towel lined plate and allow to drain for 1-2 hours

    3.) Combine yogurt, cucumber, garlic, parsley,mint, lemon juice,salt & pepper in large bowl, chill 2 hrs.
