Ingredients
- 1 carrot
- 1/2 c. walnuts
- 1 c. mushrooms
- 1 can black beans
- 1/2 c. frozen corn kernels (Don't bother thawing them)
- 1/4 c. shredded Parmesan cheese
- 1/2 c. mayonnaise
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1 tsp. Hot pepper sauce
- Cooking oil
- 6 to 8 buns
- Burger fixings of your choice: ketchup, mustard, mayo, lettuce, tomato, pickles, etc.
Directions

1Use the food processor with its shredder attachment to grate the carrot.

2Unplug the machine, remove the shredder attachment, and put in the blade attachment.

3(You'll have to wiggle around the carrots to get it securely attached.)

4Add the walnuts and mushrooms, put the lid on, and process until minced.

5Add the beans, corn, cheese, mayo, salt, pepper, and hot sauce.

6Pulse exactly four times, 1 second per pulse, until some of the mixture is mushy and some is chunky.

7Dump the mixture into the mixing bowl.

8Use your clean hands to form patties 12 inch thick and as big around as the buns.

9Put the patties on the plate as you make them.

10Wash your icky hands.

11Pour enough cooking oil in the skillet to lightly coat the bottom (about 2 teaspoons).

12Heat on medium until the oil shimmers.

13Then put the veggie patties in the skillet so they're not touching and cook for 5 to 7 minutes on each side, or until the outside is brown and slightly crispy.

14(Unless you have a super-huge skillet you will need to cook them in two batches.)

15Turn off the stove when they are done.

16Fix your burgers just the way you like them.
