  • 2 cans mixed vegetables
  • 1 stick oleo
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 2 c. grated natural Cheddar cheese
  • 1 c. mayonnaise (may use slightly less if desired)
  • 1 stack Ritz crackers

Directions

    Simmer vegetables until juice is gone and pour into casserole dish. Mix onion, celery, mayonnaise and cheese and spread over vegetables. In a saucepan, melt oleo and add crushed crackers. Put on top of casserole and bake in 350° oven for 20 minutes.
