- 4 Tbsp. butter
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 tsp. each: ground coriander and cumin
- 1 tsp. ground ginger
- 1/4 tsp. chili powder
- 1 (16 oz.) can tomatoes
- 1 tsp. salt
- 2 1/2 c. water
- 2 c. sliced carrots
- 2 c. diced potatoes
- 1 c. frozen peas (green)
- black pepper
Directions

1Melt butter.

2Add onion.

3Saute 7 to 8 minutes.

4Add garlic and spices.

5Saute 2 to 3 minutes.

6Add tomatoes, salt, pepper and water.

7Simmer 5 to 10 minutes.

8Add potatoes and carrots.

9Simmer 15 to 25 minutes (until vegetables almost tender).

10Add peas. Simmer 5 minutes.

11Serve over rice.
