  • 4 Tbsp. butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 tsp. each: ground coriander and cumin
  • 1 tsp. ground ginger
  • 1/4 tsp. chili powder
  • 1 (16 oz.) can tomatoes
  • 1 tsp. salt
  • 2 1/2 c. water
  • 2 c. sliced carrots
  • 2 c. diced potatoes
  • 1 c. frozen peas (green)
  • black pepper

    Melt butter.
