- 6 Tbsp. melted margarine
- 1 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. grated raw carrot
- 2 (10 oz.) pkg. chopped spinach
- 3 eggs, beaten
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 3/4 c. matzo meal
- oil for frying
Directions

1Saute onion, celery and carrot in oil for about 10 minutes, stirring occasionally.

2Cook spinach and drain.

3Combine vegetables.

4Add eggs, salt, pepper, melted margarine and matzo meal.

5Spoon into greased 1 1/2-quart baking dish.

6Bake at 350° for about 45 minutes or until firm.
