Ingredients

  • 1 medium onion
  • 3 medium green or red peppers
  • 3 medium potatoes
  • 2 medium tomatoes, chopped
  • 1 eggplant, chopped
  • 1 large zucchini, sliced
  • 3 Tbsp. olive oil
  • 1 tsp. dried basil leaves
  • 1/2 tsp. pepper
  • 1 tsp. salt
  • olives (optional)
  • Parmesan cheese (optional)

Directions

    Cook and stir onion in oil, using 10-inch skillet, until tender.

    Add all ingredients except tomatoes.

    Cook and cover over low heat for 10 minutes, stirring occasionally.

    Add tomatoes. Cover and simmer until green pepper is tender, approximately 5 minutes.
