- 1 medium onion
- 3 medium green or red peppers
- 3 medium potatoes
- 2 medium tomatoes, chopped
- 1 eggplant, chopped
- 1 large zucchini, sliced
- 3 Tbsp. olive oil
- 1 tsp. dried basil leaves
- 1/2 tsp. pepper
- 1 tsp. salt
- olives (optional)
- Parmesan cheese (optional)
Directions

1Cook and stir onion in oil, using 10-inch skillet, until tender.

2Add all ingredients except tomatoes.

3Cook and cover over low heat for 10 minutes, stirring occasionally.

4Add tomatoes. Cover and simmer until green pepper is tender, approximately 5 minutes.
