- 1 medium zucchini
- 3 to 4 small yellow squash
- 1 large onion
- 6 to 8 fresh mushrooms
- 2 Tbsp. parsley
- 2 tsp. salt
- 1/2 tsp. black pepper
- 1/3 c. Parmesan cheese
- 1 1/2 tsp. oregano
Directions

1In a 9 x 12-inch baking dish sprayed with food release, layer 4 to 5 tomatoes (that have been quartered), layer the zucchini (sliced), layer the yellow squash (sliced), layer the onion (thinly sliced) and layer the fresh mushrooms (sliced).

2Sprinkle on top of each the seasonings.

3Bake at 400° for 20 to 25 minutes uncovered.
