- 2 eggs
- 2 egg whites
- 2 c. low-fat milk
- 1/2 tsp. dried basil
- 1/4 tsp. crushed red pepper
- 1 loaf French bread, cut into thin slices
- 1 (16 oz.) pkg. frozen vegetable mixture
- 4 oz. shredded cheese
- 1 chopped onion
- 1 (8 oz.) can tomato sauce
Directions

1Whisk together eggs, egg whites, milk, basil and pepper.

2Dip bread slices in egg mixture and arrange, overlapping, in lightly greased 13 x 9 x 2-inch baking dish.

3Add vegetables to remaining egg mixture with cheese and onion.

4Mix well; pour over bread. Bake about 40 minutes at 350°.

5Ten minutes before finished baking, spoon on tomato sauce.
